Patatas Alioli is a great summer dish, served at room temperature or cold.

Ingredients Alioli Potato Salad

1 kg / 2 pounds potatoes
2 cups virgin or extra-virgin Spanish olive oil
1 egg
2 egg yolks
2 cloves fresh garlic
salt
fresh parsley
1 tablespoon lemon juice

Peel potatoes, cut them in slices (not too thick) and boil them in salted water for around 15-20 minutes or until tender. Drain and let cool. Meanwhile, make the alioli mayonnaise. Add salt and parsley to taste. Mix the boiled potatoes with part of the alioli mayonnaise and save the rest in a serving bowl. Serve cold.

Alioli Mayonnaise

Alioli mayonnaise is home-made mayonnaise with garlic blended in. Ingredients are listed above. It good with prawns, french fries and breaded meat dishes.

Put 1 egg, 2 cloves of ground garlic and 1 tablespoon of fresh lemon juice together in a blender with about a half cup of the virgen olive oil. Mix at medium speed. When you see that the mayonnaise thickens, start to add the rest of the oil slowly and constantly while blending. This is the most important step. If you add the oil too fast, the mayonnaise turns into a liquid and you will have to start again with new ingredients.
